In the kitchen it lends itself to sophisticated use, both raw and cooked; in particular it goes well with roast meats, legume soups, fish tartare with red meat, delicious bruschetta. It has a pleasantly bitter and spicy taste.

Green color with golden reflections. Characteristic fragrance of green almond and aromatic herbs. On the palate, it expresses itself with a medium bitter and spicy sensation of increasing intensity, with a pleasant retro-olfactory persistence.
